Excalibur™ Dehydrator
Quick Reference Guide
1. Place the dehydrator on a firm, smooth, and dry surface.
2. Distribute the products that you wish to dehydrate on the trays.
3. Hook in the door and insert the power plug into the outlet.
4. Select the desired temperature on the thermostat.
5. When your food is dried, let it cool first and then store it in air-tight food containers.
The Right Temperature
We recommend
dehydrating in raw food quality
, at temperatures below 40-50°C. The delec-
tabilities produced at this low temperature will enrich your life with new taste experiences,
because – as the raw food gourmet knows – the fructose changes at temperatures above 50°C.
The fine, fruit-typical aromas are then transformed into an intrusive sweetness.
With its abundance of nutrients, dehydrating in raw food quality also provides you with more
vitality and zest for life. The enzymes so important for your health are irreversibly inactivated or
even destroyed when food is heated above 40-50°C. If you would like to maintain the naturally
healthy enzymes, we recommend dehydrating at the low level below 40-50°C. To be certain,
you can lay a thermometer onto one of the middle screens to check the temperature.
In the beginning phase of the dehydrating process, you can also work with higher temperatures.
This is possible because so-called “evaporative cooling” results in a disparity between the air
and product temperatures. The rule of thumb states that: As long as the food to be dehydrated
is still moist, the selected temperature may be up to 10°C higher. Do not forget to reduce the
temperature after a few hours (depending on what you are drying)! Otherwise, you risk losing
the enzymes and heat-sensitive vitamins that are valuable for your health.
Important for dehydrating at low temperatures with accordingly longer drying times: The high
powered fan of the Excalibur provides optimal ventilation preventing mould and bacteria from
developing.
You can, of course, also use your Excalibur Dehydrator at settings above 40-50°C. This signifi-
cantly reduces the drying times; just follow the manufacturer’s suggestions on page 17. It is best
if you simply try out which temperature provides the best results for you.
You can select the dehydrating temperature using the turn-switch on top of the appliance. You
can choose any desired temperature between 35° and 68°C. By turning the switch counter-clo-
ckwise all the way to the end, you turn the dehydrator off.
