PURGE VALVE HANDLE
Avoid putting the lift tool in the center of the elements, at the same area as the high
limit bulb, or damage to the high limit could result.

Use scouring tool, nylon scouring pad, and small amount of Fryer
Cleanser to scrub inside of vat. Be careful not to damage sensing probes.

Do not use steel wool, other abrasive cleaners or cleaners/ sanitizers containing chlo-
rine, bromine, iodine or ammonia chemicals, as these will deteriorate the stainless steel
material and shorten the life of the unit.
Do not use a water jet (pressure sprayer) to clean the unit, or component damage could
result.
10.
Once vat is clean, display shows “SCRUB VAT COMPLETE?”
“CONFIRM”. Press
√
button for YES, display shows “OPEN
YELLOW RETURN VALVE TO WASH VAT” followed by
“CONFIRM”.
11.
Lower element and turn the yellow return valve handle to open
valve and press
√
button. Display shows “WASHING”. Oil circulates
through vat and once wash cycle is complete, display shows “CLOSE
DRAIN”. Turn red drain handle to close drain and then display shows
“IS POT FILLED?” followed by “YES NO”.

Once vat is full press
√
button and “CLOSE RETURN VALVE” followed
by “CONFIRM” shows in display. Using yellow handle, close return
valve, press
√
and then display shows “OPEN DRAIN”. Turn red handle
to open drain, display shows “RINSING”, and oil drains from vat, rinsing
the vat. When rinsing is complete, display shows “RINSE AGAIN?”
“YES NO”.

Press
√
button for YES if another rinse is needed, otherwise press X button
for NO. The display shows “OPEN YELLOW RETURN VALVE TO
POLISH?” followed by “CONFIRM”.
14.
Turn the yellow return valve handle to open valve. Oil is “polished”
by circulating it through filtering system and display shows “5:00 STOP
POLISH”. If desired, press
√
button to stop polishing, otherwise oil is
polished for 5 minutes.
15.
Once the oil is polished, the display shows “CLOSE DRAIN”. Turn red
drain handle to close drain and then display shows “FILLING” and vat
fills with oil. Let oil fill until it starts to bubble. Let oil bubble for about 15
seconds to ensure all oil is out of pan.
NOTE : Once the vat has filled and the air bubbles are coming
through, press the checkmark button to advance, “Is Pot Filled?”
displays.
