HOW DOES DEHYDRATING WORK?
Dehydrating food is a preservation process that takes place at temperatures from 40 to
70°C. Foods are gently heated to draw out the liquid, thereby removing the basis for bac-
teria and mould. This enables the food to have a longer shelf life.
The addition of chemical additives, salt or sugar is no longer necessary. Nutrition remains
unaffected. The majority of vitamins are retained. The dehydration process causes a con-
centration of minerals, fibre and nutrients, meaning that many dehydrated foods have
an intense aroma.
As a result of the liquid that is drawn out, dehydrated foods are particularly light and can
be stored without the need for refrigeration.
Dehydrated foods can be consumed in their dried form (e.g. as dried fruits) or they can
be soaked and then processed further (e.g. mushrooms) or added during cooking (e.g.
herbs).
PREPARING FOOD
Only use fresh foods.
Ensure that fruits and vegetables are ripe, but not overripe, and that they are not
bruised or rotten. If necessary, generously cut off the rotten parts.
Clean the food thoroughly before the dehydration process. Observe good kitchen hy-
giene and always work with clean hands and utensils.
Cut the food into uniformly sized pieces to ensure even dehydration.
Where possible, place the same food on all drying racks.
Take into account that dehydration causes the food to shrink. As such, do not cut the
food into pieces that are too small.
Dehydrate the food immediately after its preparation.
Do not overfill the drying racks to ensure uniform air flow.
