Nacho Mama’s Waffles
Makes 6 waffles
Serves 12 – 18 as nachos
• 2 (8.5 oz.) packages corn muffin mix
• 4 tablespoons melted butter
• 4 teaspoons taco seasoning
• 4 tablespoons jarred sliced jalapeno
peppers, chopped
• 1 cup canned or frozen corn, drained
• 1-1/2 cups taco blend cheese, shredded
(your choice)
For serving:
• turkey or beef chili
• shredded cheddar cheese
• chopped green onions
• refried black beans
• canned, sliced black olives, drained
• guacamole
1. Turn the browning control dial to 5 to preheat.
2. While preheating, prepare waffle batter.
7. When the blue READY light illuminates, wearing oven mitts, remove waffles from the
upper and lower waffle compartments using non-metallic utensils.
NOTE:
If additional waffles are to be baked, keep the Double Rotating Waffle Maker
closed to retain heat. Always wait until the blue light illuminates before adding
more batter or removing baked waffles.
TIP:
Treat your family to a hearty lunch or dinner. Cut the recipe in half and serve
with creamy corn chowder or steamy hot vegetable soup.
TIPS:
• Substitute spinach for arugula or watercress if desired.
• Serve with sweet potato fries if desired.

Coconut, Pear & Walnut Dessert Waffles
Top these delicious waffles with fresh whipped cream, pear slices and toasted coconut.
Makes: 4 waffles
• 1-1/4 cup cake flour
• 1/3 cup coconut flour
• 1/2 cup toasted walnuts
• 3 teaspoons baking powder
• 1/2 cup toasted coconut, plus more for
topping
• 3 eggs separated
• 1/3 cup melted butter
• 3/4 cup vanilla almond milk
• 3/4 cup fresh ripe pear, seeded, chopped,
plus slices for topping
for garnish
• fresh whipped cream
1. Preheat Waffle Maker.
2. Add all dry ingredients to a large bowl.
3. In a separate bowl beat egg whites until stiff peaks form.
4. In a third bowl, combine egg yolks, melted butter, almond milk and fresh pear.
5. Pour wet ingredients into dry ingredients and mix by hand until blended. Fold in egg
whites.
6. Bake waffles until golden brown, about 6 minutes.
