Orange and Mango Frozen Desserts

Mangoes are an excellent source of beta carotene which the body converts into vitamin A. Diets
rich in beta carotene may help protect against certain types of cancer. Bananas contain a certain
type of fibre that helps stimulate the growth of “friendly” bacteria in the gut. They are also high
in potassium.

Ingredients
1 ripe mango
2 bananas peeled and thickly sliced
150ml fresh orange juice
fresh raspberries and mint leaves, to decorate
Method
Stand the mango on a chopping board and carefully cut either side of the large flat stone
using a sharp knife. Scoop out the flesh with a dessert spoon and place in the Smoothie
Maker
Add the bananas and orange juice. Blend on low for a few seconds, then switch to high
and blend until smooth
Transfer to a rigid freezer –proof container. Freeze for 3 hours, then remove and stir well
with a fork to break up the ice crystals.
Return to the freezer for a further 2 hours. Remove and stir once more. Freeze until solid
Allow to stand at room temperature for 10-15 minutes to soften before serving
Spoon into dessert dishes and decorate with a few fresh raspberries and mint leaves
