Step 2. Remove lamb
and reheat oil to 385°F.
With gloves on, place
lamb on the carving
stand inside the basket
with the uncooked,
leg portion down (see
video). Place basket
into draining position
and drop down into hot
oil. Immediately reduce
temperature to 325°F
and fry for 5-9 minutes
depending upon weight.
