MAINTENANCE AND CLEANING
SHUT–DOWN AND DRY–OUT PROCEDURES:
Your UB–12R should be completely shut down and dried out at the end of each production day.
This can be accomplished quickly and safely by following these steps:
A. Make sure all product is removed from the hot Oven.
B. Set ALL Switches and Controls to their
OFF
positions (refer to Illustration #3 on page
11).
C. Turn OFF any optional water supply to the unit.
D. Set the green-handled Adjustable Steam Vent to the fully open position (vertical).
E. Turn OFF the vent stack or exhaust hood (if you have installed one).
F.
Remove any standing water from the Oven. Leave the Oven Door open by about 2 or 3
inches. The Oven's retained heat will dissipate any remaining moisture. Leave the Oven
Door open by about 1 to 2 inches whenever the Oven is not in use.
OVEN CLEANING PROCEDURES:
Your NU–VU® UB–12R should be cleaned on a regular basis, or as soon as possible after any
spillage has occurred. It is essential to maintain a clean unit, especially if the public has a chance to
view the equipment in your place of business. The following guidelines should be used for
cleaning:
A. The exterior of the Oven may be cleaned with any good stainless steel cleaner or polish,
or with hot water and a mild soap followed by a thorough rinse with fresh clean water.
Wipe the exterior dry to prevent any spotting.
B. The interior of the Oven should be swept out daily. Occasional use of a small vacuum
may help to clean the corners and spaces not accessible to a broom or brush.
C. Clean the Oven interior on a regular basis with any mild commercial cleaner, or with mild
soap and hot water followed by a thorough rinse with fresh clean water. Wipe the interior
dry to prevent any spotting.
D. Inspect the interior of the Oven for mineral deposits, especially if you have been using the
optional INTERNAL STEAM or EXTERNAL STEAM features. Remove any stains or
mineral deposits with a mild commercial mineral removal agent followed by a rinse with
fresh clean water. Wipe the interior dry to prevent spotting.

NU–VU® DOES NOT RECOMMEND the use of any strong commercial or caustic product on this
equipment. DO NOT allow any type of caustic cleaner to come into contact with any aluminum
parts, the silicone rubber Door Gaskets, or any of the sealants used in the Oven seams and joints.
These cleaning compounds may cause discoloration and degradation of these parts resulting in
permanent damage. DO NOT use bleach or bleach compounds on any chromed parts; bleach may
damage some types of chrome plating.
NOTE:
NU–VU® has had very good results with a product called
JIFFY CLEANER
. For standard cleaning
simply spray
JIFFY
on and wipe off. Heavily soiled areas may require a short period of soaking. If
used on Door Gaskets, spray on and wipe off. DO NOT soak Gaskets with
JIFFY
. This cleaner is
