PRISON PACKAGE:
Developed at NU–VU® for use by the California Department of Corrections, this option features
lockable transparent covers over all Oven controls, security screws on all external parts, an inside-
release Door Latch, and an Interior Alarm (if desired). Any UB–12R equipped with this option will
operate in a normal fashion as outlined in the previous instructions. The only difference is that once
the Controls have been set the Cover can be locked down to protect and maintain the settings until
authorized changes need to be made. Also, all external parts are secured to the unit with security-
head screws, and are not removable except with a special tool supplied by NU–VU® with the
Oven.
MINI–CHEF PROGRAMMABLE CONTROL:
To operate the Programmable Control:
A. Engage the main gas and electrical supplies along with any optional water supply.
B. Set the Oven Power Switch to the ON position. The Programmable Control
Display will show
idLE
.
C. Press
MENU
, then use the
/
keys to find
COOH
(for the Cook mode) or
CO-S
(for
the Cook With Steam mode).
D. Press
PROG
to enter the desired mode. A Program number will appear in the Display.
Use the
/
keys to locate the correct Program (#1 - #4). If a number cannot be located
or selected, there is no Program entered under that number (refer to
PROGRAMMING
THE CONTROL
at the end of this section).
E. Press
START
to begin running that Program. The Display will flash
PrE- HEAt
and
then show the current internal temperature in
F. The Gas Burners will ignite
(illuminating the green Ignition Indicator Lights) and the Oven will begin to heat.

Prepare your product while the Oven is heating. Place it on baking pans or in food service
pans and load the pans onto the Oven Rack. Make sure the baking or food service pans
are positioned correctly to maximize the benefits of the unique air flow in the Oven. Full-
size and half-size sheet pans as well as the food service pans should be centered between
the raised tabs on the Pan Slides in the Oven Rack.
G. When the Oven reaches the programmed preheat temperature the Control will sound a 3-
second alarm and show
rEAdY
. Open the Oven Door and roll in the loaded Oven Rack,
pushing it all the way to the rear of the Oven. Make sure you load it into the Oven with
the Rack Pan Stop to the back. Close and latch the Oven Door securely.
H. Press
START
to continue the Program. The Display will count down the remaining time
in the cycle.
NOTE: Pressing
ENTER
anytime during the cycle will cause the Display to show the
current internal temperature.

At the end of the programmed cycle time the Display will show
End
and the Control will
beep continuously until you press
START
. The Display will then show
idLE
.
NOTE: The Oven Heating Elements do not function when the Control is in
idLE
. The
Oven will now begin to slowly cool down.
CAUTION: STAND AWAY FROM THE FRONT OF THE OVEN WHEN
OPENING THE OVEN DOOR AFTER A BAKING CYCLE TO AVOID
EXPOSURE TO ESCAPING HEAT AND STEAM!!!
