Breakfast Bread Pudding
6 slices of bacon, cooked and chopped
12 slices of French bread (3/4
"
thick), cut into quarters
3 eggs
1½ cups milk
¼ tsp. nutmeg
1. Mix the bacon with the bread in a large bowl.
2. In a smaller bowl, beat the eggs with the milk and nutmeg.
3. Pour the egg mixture into the bread mixture. Make sure all pieces are
well coated.
4. Pour all into the pot for your pressure cooker.
5. Lock on the lid, set to high pressure and cook for 18 minutes.
6. Carefully do quick release of pressure.
7. Serve hot with butter and maple syrup.
Serves 4–6
Sweet Onion Soup
3 large sweet onions, chopped
2 stalks celery, chopped
3 Tbsp. olive oil
3 large potatoes, peeled and cubed
4 cups vegetable stock
2 tsp. parsley flakes
1½ tsp. salt
¼ tsp. pepper
1. BROWN the onions and celery in the olive oil for about 5 minutes.
2. Add all other ingredients. Cancel BROWN.
3. Lock on the lid, and set to high pressure for 6 minutes.
4. Carefully do quick release of pressure.
5. Use a blender to puree, if desired, and serve hot.
