Poached Pears and Mulled Cider
Two birds, one stone—you know how the saying goes! This simple recipe
provides a lovely dessert and a hot cup of cider! Perfect for fall when the air
is getting chilly and pears are in season. Spruce up the pears with vanilla ice
cream, and the cider with a shot of brandy, if desired. Enjoy!
3 cups white grape or apple juice
3 cups water
½–1 cup of sugar
2 Tbsp. lemon
2 cinnamon sticks
1
"
fresh ginger, minced
6 whole cloves
10 peppercorns
4–6 Bartlett pears, peeled and cored
ground nutmeg
honey
1. Add the juice, water and sugar to your pressure cooker pot. Set to
BROWN and stir occasionally until the sugar dissolves (about 3–5
minutes).
2. Add the remaining ingredients (place pears on their side so they are
covered by the liquid).
3. Cancel BROWN. Cover and lock the pressure cooker lid. Set for 8
minutes on low or medium pressure.
4. When finished, do a quick release of the pressure and remove the lid.
5. Scoop the pears out onto a plate to cool. Cover the cider and set to
WARM.
6. Serve when pears are at room temperature, sprinkled with nutmeg and
drizzled with honey.
