5. Once the test is performed, open and compare the results
(graphic) of the tests with and without dough temperature
adjustment set time= 20 min. For doing this:
- Open the standard test;
- Open the test without temperature adjustment (without set-
tings);
- Open the test with temperature adjustment (with settings) ;

Results interpretation:

1st case, the adjustment is right
In that case, the comparison test is very close to the standard test
for a dough temperature set time=20 min. The calculation of the
calibration rate is right, variation < 0,5 ˚C.

2d case, the adjustment is out of tolerance.
In that case, the dough temperature is not within tolerance adjust-
ment (+0,5˚C). The dough temperature with temperature adjust-
ment can be above or below the standard dough temperature.
Terefore, you must make a calibration rate adjustment previously
calculated. For doing this, we must do a calculation by hand.

Method to adjust the calibration rate for temperature:
We must think of temperature set time=20 min. So at set time=20
min, we must:
Write down the dough temperature for the standard test (stan-
dard T°);
1. Write down the dough temperature for testing without
temperature adjustment (T° without adjust) ;
2. Write down the dough temperature for testing with tempe-
rature adjustment (T° with adjust) ;
:Once these temperatures known, do the following calculations:
T° without adjust (at 20 min) - T° with adjust (at 20 min) =
adjustment

dard
