connect it again.
This operation permits to reset the base board and delete any other
alarms in memory.
9.4. Routine maintenance
Below we provide a series of instructions for the routine inspection and
maintenance of the equipment, to be carried out periodically depending on
the use and the state of cleanliness of the oven.
9.4.1.
Cooking chamber
Routine cleaning of the cooking chamber consists of cleaning the surface
of the components of the oven’s cooking chamber and checking the state
of cleanliness of the outside of the diffuser;
Deep cleaning of the cooking chamber consists of cleaning the entire
cooking chamber with the removal of all the internal elements of the
chamber (rack frame and diffusers). See paragraph 8.3.
9.4.2.
Cooking chamber door
In the event that the oven is equipped with a door, check that it opens and
closes properly.
If the door is noisy and moves in a jerking fashion, remove any dirt that has
accumulated between the bushings and the brackets on the outside of the
door using a brush; next lubricate the brass bearings.
Then check the integrity of the glass, the operation of the springs and the
clearance of the brass bearings.
9.4.3.
Rack frame
Chec
k the rack’s tension, wear and alignment and, if necessary, adjust it by
using the rack tensioners located at the oven entrance.
Inspect and clean the rack.
Check the state of wear of the bushings of the rack tensioner shaft (oven
entrance).
Lubricate the bushings of the rack tensioner shaft (oven entrance) and the
bearings of the rack conveyor shaft.
9.4.4.
Control panel - fan motor panel
Dust, flour and dirt in general can accumulate inside the control panel,
where the electrical components are located. In this regard it is advisable to
inspect the area and clean using an extractor fan and/or compressed air.
Use a soft brush to help clean the more difficult areas.
