When the oil has dripped off, put the food into

the food with a suitable kitchen utensil (e.g.
kitchen tongs).
Cool down the product at least 1 to 2 hours

Note:
If you do not use the deep fryer regu-
larly, it is advisable to store the cooled oil in
well-sealed bottles or other frying containers –
preferably in the refrigerator or a similar cool
storage location. Fill the bottles through a fine
sieve in order to remove any food particles
from the oil.

Storage of the used oil
Note:
It is not necessary to change the oil after
each use. Contamination of the oil caused by fry-
ing reduces its useful life.
In order to increase the useful life, always
filter the oil after each use:
Pour the cooled oil through a fine sieve to
remove all food residues from the oil.
Store it in the original bottle or in a tightly
closed container in the refrigerator or in a
dark, cool and dry place.
Replace the oil after each 10-15 uses; or
earlier if
- the oil becomes brown and thick;
- the oil becomes pungent or smells bad;
- fried food tastes bad;
- the oil becomes brown or contains hard
deposits;
- there is foam formation during heating;
- there is thick smoke formation even at low
temperatures.
However, do not use the oil for longer than
six months. Always follow the instructions pro-
vided on the packaging.
Note:
Frying oil should not be disposed of
into drains or the toilet! The oil solidifies and
can block the drains
Getting rid of unwanted
flavours from the oil
Some food, e.g. fish, loses liquid during frying.
This gets into the oil and alters its smell and flavour.
This flavour is then passed on to the next food that
gets fried in this oil.
With a simple trick, you can reduce or even
completely remove such unwanted flavours:
