Ingredients
200 g self raising flour
150 g butter, melted
150 g sugar
2 eggs
3 tbsp icing sugar
2 tbsp milk
1 tsp orange (or lemon) essence
Zest and juice of 1 orange (or lemon)
Method
Preheat the Hot Air Fryer to 160 °C.
Beat the melted butter and sugar together until it turns creamy. Add the eggs and
beat again, then stir in the flour, milk, orange (or lemon) essence and zest. Pour the
mixture into a greased loaf tin or oven dish, ensuring that it is filled by no more than

Place the loaf tin or oven dish into the non-stick coated cooking basked and cook
for approximately 30 minutes or until firm and cooked through. Set the cake to one
side on a cooling rack.
Mix together the orange (or lemon) juice and icing sugar, then pour it over the cooled
cake. More icing sugar will be required if using lemon, to balance out the sourness.
