Introduction
Open fryers are used to cook many products in our
restaurants. Available in electric or gas, this fryer
operates without pressure and can cook from 1 to 6
heads of chicken. It is also used to cook strips, fries, etc. This
procedure covers the Pitco SG6H fryer.
CAUTION!
All fryers are potentially hazardous, in that fire, electrical
shock, or burns may occur. The equipment must be installed
and serviced only by authorized service agents.
All operating procedures must be followed carefully. Fryers
are equipped with safety devices that minimize these
hazards.

fryer OFF and immediately contact your authorized service
agent.
Never remove product from fryer prior to completion off cook
cycle. Removing product before the cook cycle is completed
could result in under cooked product and place our customers
at risk of food borne illness.
