3 Drain Old
Shortening and
Discard
Pull filter pan out far enough to allow drain spout to
swivel to the up position (level with the floor). Push the
filter pan back in place.
Open drain valve to drain shortening into a shortening
shuttle/stockpot.
Drain a small amount of shortening into a stainless steel
jug and pour this shortening back into the stockpot to
flush out any small scraps of food.
Use an L-shaped metal brush or rod to expel any
particles that may be blocking the drain valve.
Discard the old shortening from the shortening
shuttle/stockpot into a shortening drum/barrel.
Close the drain valve. Put drain spout back in the down
position.
Never pour shortening down the drain.
