Roast Chicken
Roast Chicken
Serves : 4 – 6
Ingredients:

melted butter

Method:
Clean and pat chicken dry with paper
towel. Brush chicken with melted
butter and sprinkle with pepper.
Place chicken breast-side down on
metal tray.
To Cook by Microwave:
Cook on 800 W for 36 to 42
minutes, turning halfway through
cooking. Stand for one third of
cooking time, wrapped in foil before
carving.
To Cook by Combination:
Prepare chicken as above. Cook on
COMBINATION 3 for 25 minutes,
turn it over, cook for another 15
minutes on GRILL 3. Stand for at
least 15 minutes, wrapped in foil,
before carving.
Italian Chicken
Casserole
Serves : 4 – 6
Ingredients:
15 ml oil
1 clove garlic, crushed
6 chicken pieces

60 ml tomato paste

marjoram

button mushrooms

salt and pepper
Method:
Place oil, garlic and chicken pieces
in a large casserole. Cook on
1000 W for 4 minutes, turn and
cook on 1000 W for a further 4
minutes. Set aside. Place onion in
a 3-litre casserole dish, cover and
cook on 1000 W for 4 minutes. Add
chicken, tomatoes, tomato paste,
marjoram and oregano to dish and
cook on 800 W for 7 to 8 minutes.
Add remaining ingredients to dish
and cook on 800 W for a further
5 minutes. Serve with garden salad
and crusty bread.
Tarragon Chicken
and Mushrooms
Serves : 6 – 8
Ingredients:

chicken pieces
1 onion, sliced

dried tarragon leaves
salt and pepper

mushrooms, finely sliced
440 ml can cream of mushroom soup
125 ml sour cream
Method:
To Cook by Microwave:
Place chicken and onion in a 4-litre
casserole dish. Cook on 800 W for
25 to 30 minutes. Drain away any
excess fat. Season with tarragon,
salt and pepper. Add mushrooms.
Cook on 800 W for 3 to 4 minutes.
Blend together soup and sour cream.
Spoon over chicken. Cook covered
on 800 W for 12 to 15 minutes.
Remove chicken to a serving platter.
Stir sauce and spoon over chicken.
Serve with rice and vegetables.
To Cook by Combination:
Place all ingredients in a 4-litre
casserole dish, except mushrooms
and sour cream. Cover with a lid and
cook on COMBINATION 3 for 30
minutes. Stir in mushrooms and sour
cream. Continue to cook covered on
COMBINATION 3 for a further 10 to
15 minutes. Stir and serve.
