Recommendations for use
Preparation of pasta machine
Fix the machine onto th table with the clamp provided (Step 1).
Insert the handle into the opening on the side of roller. Before the first use, clean th machine with a dry cloth to removeany excess oil. To
clean the rollers, pass a small quantity of dough through them and thn throw the dough away.
How to prepare the mixture
Ingredients (quantity for about 6 people):
500g Soft wheat flour
5 eggs (eggs can be replaced by a glass of natural mineral water)
For "al dente"pasta, mix 250g of soft wheat flour with 250g of durum wheat flour. Do not add any salt. Pour the flourinto a container. Crack
the eggs and drop them in the middle of the fluor (Step 2). Mix the eggs with the flour with a fork until to have perfect mix. Knead the mix
with your hands (Step 3) until it’s completely homogeneous and thick. If the ex is too dry, add a small quantity of water.If it’s too liquid, add a
little quantity of four. A good dough should no stick to the fingers. Remove the mixture from the container and place it onto a lightly floured
work surface (Step 4). If necessary, continue to knead the dough wth your hands and cuti t into small pieces (Step 5).
Advice : do not use eggs directly from the fridge.
How to prepare the dought with pasta machine
Set the machine regulator to position 1, pulling it outwards and turning it so that the two smooth rollers are completely open (approx. 3mm)
(Step 6). Turning the handle, pass a piece pass a small piece of dough through the rollers of the machine (Step 7). Repeat this process about
5-6 times, folding the dough each time and adding a little flour if necessary (Step 8). Once the dough has reached a regular shape, place the
regulator in position 2 and pass the dough through the rollers once (Step 9). Pass the dough again through the rollers in position 3 and so on,
until the dough reaches the desired thickness (minimum thickness 0.2 mm in position 9). Using a knife, cut the dough perpendicularly, into
pieces about 25cm long. Insert the crank into the opening on the side of the cutting rollers and slowly turn the handle by passing the dough
sheets through, to obtain the desired type of dough (Steps 10 and 11).
Note 1: If the rollers do not succeed in "cutting", it means that the dough is too soft. In this case, add flour to the dough and pass the dough
through the smooth rollers several times.
Note 2: If the dough is too dry and is not "caught" by the cutting rollers, add some water to the dough before passing it through the smooth
rollers again. Place the pasta on a clean towel and allow to dry for at least an hour. Fresh pasta can be stored in a cool, dry place for 1 to 2
weeks.
Cook the pasta in a large pot of boiling water (4 liters per 500g pasta) to which salt has been added. Depending on their thickness, fresh
pasta requires only about 2 to 5 minutes of cooking time. Stir gently while cooking pasta and drain once ready.
Maintenance
To remove a cutter accessory, lift it up and slide it along its tracks. To install another accessory, proceed in the opposite direction. When
using the machine, the scrapers underneath the smooth rollers should be cleaned from time to time with a piece of paper towel (Step 12).
NEVER WASH THE MACHINE IN WATER OR DISHWASHER (Step 13).
Use a brush or small wooden skewer or brush to clean the machine after use (Step 14). To clean the machine internally, remove the plastic
guards (Step 15). If necessary, put a few drops of Vaseline oil to lubricate the ends of the cutting rollers (Step 16).
NEVER PASS KNIVES OR KNIVES BETWEEN THEM.
After use, return the machine and its accessories to their boxes (Step 17).
