Turn on the Oven.
On Combistar FX Lev.2 and BX Ovens:
– Pre-heat the oven:
- FX Ovens: vent closed and motor at mini-
mum.
- BX Ovens: vent closed.
– Select the Convection cooking mode ( ) (vent
open from 0% to 50% ).
– Set the temperature (max. temp. 150°C).
– Set fan speed to 2.
Caution - Warning
Operation with closed vent over 50% is not
permitted.
On Combistar FX Lev.3 Ovens:
– Pre-heat the oven (vent closed and motor at
minimum).
“Manual” Smoking
– as described for lev.2 ovens (fan speed 3)
Caution - Warning
Operation with closed vent over 50% is not
permitted.
“Programmed” hot smoking
– select “Programs”
– select “ Special functions”
– select “Smoking” and press START”.

Turn on the Smoker by rotating the knob
(E)
on one of the two positions depending on the
desired smoking times and quality (the orange
light

turns on) (see fi g.4).
Important
Once the selected smoking cycle has com-
plete, the SMOK goes turns off (heating ele-
ments, selector switch, light indicator off ).
However, smoke production may continue
for more time, consistently with the charge
and operating mode of the oven selected.

Important
Pay specifi c attention to the internal surfaces
of the drawer which may still be very hot and
have incandescent unburned residues.
