Start of Shift
At the start of the shift, press the “ON/OFF” button or the large blue button in the middle of the
touch screen to turn the oven on.
Confirm that the temperature set point for the products you intend to bake. You may easily to
do this by selecting the recipe you want to bake (see the control instructions for control that is
in your oven).
Allow the oven to run for 1 hour or at least 30 minutes after it reaches the set point.
Baking
When the oven is ready and the product is ready to bake, open the loading door wide enough to
allow the rack to enter and to keep the hot door from contacting your body. Allow the rack
carrier to rotate to the correct position, aligned with the door opening and allow the carrier to
lower.
Push the oven rack into the oven. With single racks it is easier to push the rack into the oven if
you turn the rack slightly to one side and allow one wheel to pass over the threshold at a time.
Push the rack all the way into the oven so that the rack stop will catch on the top of the rack.
Close the loading door fully. Press the start button. The oven will begin executing the recipe
you have selected.
When the timer times down and the alarm sounds, open the loading door and check the
product. If the product needs more time, close the door and press the time adjust button to
add time. The timer will start without pressing the “START/STOP” button.
When the product is done, open the door fully and allow the rack to rotate to the stop position
and lower. Use hot pads or oven mits to release the rack stop. Use hot pads or oven mits to
pull the rack out of the oven. Close the loading door.
Be sure that no one touches the oven racks until they are cool.
Press the stop button again to reset the oven control, or select the next recipe.
End of Shift
When you are through baking, press the “ON/OFF” button or the red button in the left corner of
the touch screen control to turn the oven off.
Open the loading door slightly to allow the oven to dry out until the next shift.
