How to release the pressure
after cooking
Depending on the main ingredient of
the dish being prepared, you will need to
determine whether the pressure cooker
needs to cool naturally or you need to use
a fast cooling method. You can choose
between one of two methods to release the
pressure:
1. Releasing the pressure naturally
To use this method, move the pressure
cooker off the heat source and let the
pressure drop naturally. Depending on the
amount of food and liquid, this may take
10 to 15 minutes. When it has cooled down,
remove the rotary valve (22) to release
the pressure (Fig. 11). If there is still some
pressure left inside the pressure cooker, it
will be expelled through the chimney (23).
2. Releasing the pressure by cooling the
pot with cold water.
With the pot in the sink, let cold water run
over the lid (1) and tilt the lid so that cold
water runs down the sides, away from the
safety systems (Fig. 12).
Once the pressure has dropped, remove
the rotary valve (22) (Fig. 11) and wait until
the steam has dissipated completely. This
method is used when the pressure needs
to be released as soon as possible, mainly
when preparing vegetables, seafood or other
delicate foods that are easily overcooked.
When the pressure has been released,
open the cooker by turning the knob (33)
anticlockwise until the clamp bar (35) is
at the lowest possible position (Fig. 7).
Slide the lid (1) horizontally until removed
completely. Open the pressure cooker
carefully. Keep your face and body at some
distance as hot cooking steam may still
remain inside the pot.
Cleaning and care
Stainless steel (Clasica model)
Follow these recommendations to ensure
proper maintenance of your 18/10 stainless
steel pressure cooker:
The cooker body (11) can be washed in
a dishwasher, but the lid (1) needs to be
cleaned by hand with warm water and
mild soap.
The pressure cooker must be washed after
each use. Dry the pot with a soft cloth
immediately after washing so it maintains
its original look and shine over time.

CAUTION:
never immerse the pressure
cooker in water; do not force the
pressure cooker lid to open it.
NOTE:
once the pressure has been fully
released, move the pot gently before
opening the lid, especially after cooking
rice, purée, high-fat foods or sauces.
This will prevent these foods from
spattering when you open the lid.
