ASSEMBLY
• The shredding disc is reversible (4mm on one side and 6mm on
the other). Select the desired side and place the disc using the
finger holes intended for handling the disc.

• Lock the lid and attach the pushers as described under sections
3F and 3G above.
note:
Always wait until the disc has stopped turning before
unlocking the lid.
E. Fitting the Emulsion Disc
• With the XL bowl assembled, place the emulsion disc on the
central shaft of the bowl. Align the guidemarkers and press
down to lock in.
• Lock the lid onto the preparation bowl.
tIP:
Remove the small pusher with drip feed from the lid so that
the preparations can aerate properly.
The disc is now ready to be used. Press
to activate rotation
of the disc in the bowl. With the emulsion disc, you can create the
following preparations easily:
• Beaten egg whites
• Whipped cream (chantilly, crème montée, tiramisu…)
• Mayonnaise (béarnaise, rouille, crème mousseline…)
• Vinaigrette
• Butter cream
• Sabayon
