dry. A perfect baked potato should be crispy and crackly on the
outside, light and fluffy on the inside, like powder snow. Bake
potatoes without wrapping them. Many operators wrap potatoes in foil
before they bake them, this produces a steamed potato.
Oil, coarse salt, and pepper on the outside before baking, is a real treat
for those of us who enjoy potato skins.
