Crack the eggs into a bowl, and mix until frothy. Add flour, mix until
you get a
lump free batter
that will
run smoothly
off the whip, when
lifted 12" above the bowl. Add whole milk until you get the
consistency of thin buttermilk or a crepe batter, and correct the
seasoning. Spray the muffin tins with a vegetable spray; fill them
to
the top
with popover batter. Bake at 325ºf. with 20% humidity for
about 30-40 minutes,
until brown all over [there should be no yellow].
