5. 1 USING TIPS
1

This machine is to be used with anhydrous

“creams”. These specific mixes have the correct
viscosity when they look bright and shining.
When they look matt, the fat contained isn’t
completely melt and cream becomes less fluid.
The fluidity can be improved increasing the
temperature of the product.

2

If the machine operates in rooms that

become cold during the night , it’s suggestable to
keep it on all time or the empty it during the night.

5. 2 HOW TO USE THE UNIT
1

free mode :

 when it’s necessary to extract

high quantities of cream or when the machine

must be emptied. In this mode the long nozzle

should not be mounted.

2

decoration mode :

 used when it’s

necessary to decorate a dessert, ice-cream or

similar. The long nozzle must be mounted.

3

filling mode :

 needed to pierce and fill

croissants and other pastries. When doing this

it’s advisable to act on the faucet handle with a

repeated movement, as indicated in the picture

1-2-3.

5. 3 DESCRIPTION OF CONTROLS

The unit has a thermostat to control the product
temperature and 2 switches to activate the heater
and the mixer:

figura 1

Main switch (A)

Mixer switch (B)

Thermostat (C)

It controls the temperature of the product in the
bowl. Turning the knob counterclockwise you de-
crease the temperature ( The minimum is the
temperature of the ambient), while turning it
clockwise  you increase the temperature at 45 °C.

For the operation of the machine:

1

Put the main switch (A) in position (I), if you

want to heat only the product.

2

Put the mixer switch (B) in position (I), if  you

want to heat and mix the product.

5. 4 SUGGESTIONS
1

The machine is intended to be used only with

confectionary and anhydrous foods

2

The machine cannot be used with pure

cocoa ( even if diluted in oil) in order to avoid
cleaning problems

3

Once the machine is started with main switch

(A) in position (I) it’s imperative to wait for 10/15
minutes in order to warm the product. After that
time, it’s possible to activate the mixer switch (B)
and to start serving the product.

5. 5 CLEANING
1

Cleaning and sanitizing of the dispenser are

recommended to guarantee the conservation of
the best product taste and the highest unit
efficiency. This section is a procedural guideline
only and is subject to the requirements of the
local Health Authorities.
