Maximum freezing capacity
To ensure that fresh food placed in the
freezer freezes through to the core as
quickly as possible, the maximum
freezing capacity must not be
exceeded. The maximum freezing
capacity for freezing within a 24-hour
period can be found on the data plate:
"Freezing capacity ....kg/24 hrs."
The maximum freezing capacity stated
on the data plate was calculated
according to the DIN EN ISO 15502
standard.
Freezing fresh food
Fresh food should be frozen as quickly
as possible so that its nutritional value,
vitamin content, appearance and taste
are maintained.
Food which takes a long time to freeze
will lose more water from its cells, which
then shrink.
During the defrosting process, only
some of this water is reabsorbed by the
cells.
In practical terms, this means that the
food loses a substantial amount of
liquid, which can be seen by the fact
that a large pool of water collects
around it.
If food is frozen quickly, the cells have
less time to lose moisture, so they
shrink less.
During the defrosting process, the
lower amount of moisture lost from the
cells is more easily reabsorbed by the
cells, which means that the food only
loses a minimal amount of liquid. Very
little water collects around the
defrosted food.
Storing prepackaged frozen
food
When buying prepackaged frozen food
to store in your freezer, check:
– That the packaging is not damaged
– The best-before date
– The temperature at which the frozen
food is being stored in the shop. The
shelf life of frozen food is reduced if
the food has been stored at a
temperature warmer than -18°C
(0°F).

Buy frozen food once you have
finished the rest of your shopping,
and wrap it in newspaper or use a
cooler bag to transport it.

Place it in the freezer as soon as
possible.
Never refreeze partially or fully
thawed food. Thawed food may only
be refrozen after it has been
cooked.
