3.2.4. Drain cooling operation
The washing/drain water inlet unit has only one outlet connected to a fitting located in the
vertical vent pipe. During cooking, this fitting injects water into the vent pipe to condensate
the outlet steam, to keep the siphon filled and to maintain the temperature of the drain
water within certain limits. The drain water timing depends on the temperature read by the
siphon PT1000 probe.
Operation : when switching on the oven, the machine fills water up to the siphon stop.
When the probe reads a temperature higher than the one set, water is supplied until it is
within the set temperature range. However, for safety purposes, water is automatically
supplied every 10 minutes. Whereas, during washing, this fitting injects the water needed
to fill the collection tank.
3.2.5. Steam production operation
The chamber water inlet unit is connected to the water supply system for steam
generation. The water control, in the various cooking modes, is entirely controlled by the
control system. There are 3 different options to select for the amount of steam.
