6 Wartung und Entsorgung 

 

6.1 Reinigung 

Reinigen  Sie  das  Gerät  mit  einem 
feuchten  Lappen.  Verwenden  Sie  kein 
Lösungsmittel,  z.B.  Aceton,  da  dieses 
den Kunststoff angreift. 
Zum 

Desinfizieren

1 Description 

 

The  oil  meter  FOM  320  is  a  handy 
sensing  device  with  which  you  can 
determine  the  quality  of  various  oil 
types.  The  measurement  is  performed 
directly  in  hot  oil  –  e.g.  in  the  deep  fat 
fryer.  This  helps  in  determining  the  oil 
temperature in °C and  the  oil quality  in 
percent  PC  (Polar  Compounds).  The

thermaloxidative  utilization  factor  of  a 
frying 

oil. 

According 

to 

the 

recommendations  of  DGF  (German 
Society  for  Fat  Science)  24  %  Polar 
Compounds are to be viewed as a limit

Local  regulations  regarding  maximum 
value  of  Polar  Compounds  have  to  be 
respected.

1 Description 

 

Le  testeur  de  huile  FOM  320  est  un 
instrument  de  mesure  pratique  et 
maniable, 

vous 

permettant 

de 

déterminer la qualité de différents types 
d’huile. 
La  mesure  s’éffectue  en  plongeant  la 
sonde directement dans l’huile chaude, 
par  exemple  dans  la  friteuse.  Ceci 
faisant,vous 

pouvez 

mesurer 

la 

température  de  l’huile  en  °C  et  sa 
qualité 
en  pourcentage  PC  (PolarCompounds 
=  composés  polaires).  Le  pourcentage 
de  composés  polaires  est  une  mesure 
permettant 

d’évaluer 

le 

degré 

d’oxydation  thermique  d’une  huile  de 
friture.  Comme  préconisé  par  la  DGF 
(Société  Allemande  de  la  Science  des 
graisses), 24% de composants polaires 
(Polar  Compounds)  est  le  pourcentage 
à  considérer  comme  seuil  d’aptitude  à 
la  consommation  d’une  graisse  de 
friture.
