6.3. Taking the enrobing machine out of operation
Draining the chocolate on completion of the coating work
•
Switch the chocolate wheel off by setting the “Chocolate wheel” switch
(Fig. 7; No. 4)
to “OFF”.
•
Set the “Mesh conveyor” switch

to the “OFF” position.
•
Set the “Standby / Operation” switch
(2)
to “Standby”.
•
Set the left-hand temperature control (”Standby temperature / operating
temperature”)

to a temperature setting of approx. 45 °C.
The temperature will increase and the chocolate will remain liquid.
•
Place a bowl under the outlet valve
(Fig. 21)
, open the valve and allow the
chocolate to drain.
Any chocolate remaining in the bath must be pushed to the outlet with a
plastic scraper.
•
Give the mesh conveyor a preliminary clean (several minutes of shaking and
blowing).
•
Remove the mesh conveyor for a thorough clean and then replace it.
•
Set the main switch to “OFF”
(Fig. 7; No. 12)

The machine has now been taken out of operation.
•
To shut the machine down completely, disconnect it from the mains and take
measures to prevent restart.
Finishing the coating work without draining the chocolate
•
Switch the chocolate wheel off by setting the “Chocolate wheel” switch
(Fig. 7; No. 4)
to “OFF”.
•
Give the mesh conveyor a preliminary clean (several minutes of shaking and
blowing).
•
Open the base gate
(Fig. 17)
in the mesh conveyor.
•
Set the “Mesh conveyor” switch
(Fig. 7; No. 6)
to the “OFF” position.
•
Give the chocolate wheel a preliminary clean.
•
Set the left-hand temperature control (Standby temperature / Operating
temperature)

to a temperature setting of approx. 45 °C.
The machine is now in standby mode. The chocolate will remain liquid and can
be further processed on the following day after re-tempering.
The machine will have to be re
fi
lled if a lot of chocolate has been used.
Proceed as follows if you would like to take the enrobing machine out of
operation without standby operation and cleaning:
•
Set the “Standby / Operation” switch
(Fig. 7; No. 2)
to “0”.
•
Set the main switch

to “OFF”.
The machine has now been taken out of operation.
•
To shut the machine down completely, disconnect it from the mains and take
measures to prevent restart.
In the event of a restart, it is essential to begin at the “Preparation”
stage and follow the instructions.
