Cranberry Upside Down Cake
Serves 10
1 Box (18 ¼ ounces) Yellow cake mix
1 ¼ cup water
3 large eggs
1/3 cup pf vegetable oil
½ cup of sugar
¼ cup of butter
1 tablespoon of corn syrup
3 cups fresh cranberries
•
In a bowl, combine cake mix, water eggs and oil: using a
mixer, beat for 1 minute on low then 2 minutes on high.
Set aside.
•
Press the power button on the multi cooker, then select the
sauté function. Add the butter, sugar and corn syrup and
cook for 2 minutes stirring till they are melted.
•
Add the cranberries and cook for 2 minutes longer stirring
constantly.
•
Turn the multi cooker off and let cranberries cool for 15
minutes.
•
Spray non stick spray inside the multi cooker. Scrape the
cake batter evenly on top of cranberry mixture.
•
Press the power button, press the select button till bake is
chosen.
•
Set temperature to 325 degrees and set timer for 30
minutes.
•
When cook time is complete, let set for 10 minutes, then
invert on to cutting board.
