Various cooking techniques
You can use your wok to apply several different
cooking techniques:
Sautéing
Sautéing is a very quick cooking technique and
should be applied using high temperatures.
Therefore, make sure the wok is hot before
adding oil or ingredients. Wait a few minutes
until the wok has reached the desired tempera-
ture. Wait until this time before adding finely
chopped ingredients to the wok.
Tips for sautéing
Sauté meat in small pieces whose weight
does not exceed 150g. This will prevent the
temperature inside wok from falling to quickly
and en-sure that the meat is stewed. As soon
as the meat is fully cooked, remove the wok
and continue by sautéing vegetables, sauces or
noodles. Once the vegetables etc. have reached
the desired consistency, add the meat again to
reheat it.
Cut the vegetables and the meat in pieces of
the same size before frying the pieces. This will
allow you to fry the pieces quickly and evenly.
Cut meat into thin strips before sautéing it.
If you want to sauté marinated meat strips,
drain any surplus marinade before the meat
starts to cook, as the meat will otherwise
become tough.
Make sure the oil has reached the proper
temperature before starting to cook. The most
suitable oil for use with your wok is rapeseed
or sunflower oil. Traditional Asiatic oils usually
contain peanut or sesame oil.
Sautéing is very fast. The shorter the cooking
time, the less likely it is that your meat will
become tough or overcooked. Sautéing will
en-sure that your ingredients will remain
tender and crisp.
When sautéing, do not use the lid, as you will
sauté the ingredients without adding any
water. The water dripping from the lid would
make your meat tough.
To keep your food fresh and crisp, serve the
