The indirect heated boiling pan, referred to from
now on as the appliance, is designed and construct-
ed for preparing and cooking foods in the profes-
sional catering sector.
The appliance is produced in several versions to
meet varying user requirements (see diagram).

GENERAL DESCRIPTION OF APPLIANCE
Main Parts
A)Pan lid
B)Hot water tap: for regulating the water flow
C)Cold water tap: for regulating the water flow
D)Heating element control knob: for setting the heat-
ing power.
E)Mains light: comes on to indicate that the electricity
supply is on.
F) Thermostat light: indicates that safety thermostats
have been tripped
G)Adjustable water spout: directs the flow of water
H)Jacket filler cap
L) Drain tap: drains the water from the pan.
M)Door: for accessing the inside of the appliance
N)Water level tap: for checking the water level inside
the jacket.
P)Pressure control valve: controls the pressure in-
side the jacket.
Q)Jacket vacuum valve
R)Pressure gauge: provides a reading of the pressure
inside the jacket (~ 0,5 bar)
S)Pan maximum pressure (0,05) and vacuum valve
