Mix cornstarch and ginger; then blend in soy, sherry and broth and set aside.
Set temperature to 400ºF (200ºC) and preheat. Add oil. When oil is hot, add garlic
and shrimp and stir-fry for about 1 minute. Add snow peas and stir-fry for about
2 minutes. Add water chestnuts and green onions, stir to mix. Add cornstarch
mixture and stir until it boils and thickens (about 1 minute).
Makes 4 servings.
Fried Rice
3 cups (750 ml) cooked rice, chilled
3 tbsp. (45 ml) peanut oil
1-1/2 cups (375 ml) cooked beef, chicken, pork or shrimp
1/2 cup (125 ml) chopped scallions
2 eggs, beaten
1/4 cup (60 ml) peas, cooked
salt, pepper, parsley and Soy sauce to taste
Set control to 350ºF (175ºC) and preheat. Add oil. When oil is hot, add rice
stirring steadily until lightly browned. Add meat, poultry or shrimp; scallions, salt
and pepper. Cook for 1 minute, stirring constantly. Push mixture to side. Pour eggs
into center. Stir until they begin to set. Blend rice mixture with eggs. Add peas,
parsley and soy sauce. Stir and serve.
