Coconut Tapioca Pumpkin

Ingredients
• 2 cups water
• 220g tapioca pearls
• 300g diced pumpkin
• 500ml coconut cream
• 1 tsp salt
• 275g sugar
Method
1.
Pour into cooker the tapioca, 250gm of sugar,
pumpkin and water and cook on
Reheat Function
.

Meanwhile, heat the coconut cream with remaining
sugar and salt.
3.
To serve, layer into a glass with coconut sauce.
4.
Serving suggestion: add a caramelised banana and
remove pumpkin.
