Pineapple & Coconut spiced Quinoa

Ingredients
• 4 cloves garlic chopped finely
• 1 stalk lemongrass (white only)
• 2 tsp ground cumin
• 1 long green chilli chopped finely (seeds optional)
• 300ml vegetable stock
• 200ml coconut cream
• 80 gm chopped tinned or fresh pineapple pieces

/ well rinsed
• Salt and pepper
Method
1.
In cooker place cumin, garlic, chilli, stock, coconut cream, lemongrass and quinoa.

Cook on
Quinoa Function
in main menu.
3.
When finished add pineapple.
4.
For a delicious meal, serve with pork and green beans.
