Steamed Salmon with Mango Salsa
Serves: 4
Ingredients:
4 salmon
fi
llets each 4-6 oz (100-150 g)
Marinade:
3 tbsp
white wine
1 clove
garlic,
crushed
1 tsp
fresh root ginger,
grated
Mango salsa:
2 jalapeno
peppers,
seeds removed, thinly
sliced
4 oz (110 g)
peeled cooked
shrimp, chopped
4
green onions, thinly
sliced
1 small
clove
garlic,
fi
nely chopped
1
ripe but
fi
rm avocado,
peeled and chopped
1
ripe mango, peeled
and chopped
1 lime,
juice
of
Method:
Mix the marinade ingredients together.
Pour marinade over salmon in a
shallow dish and leave to marinate
for 2-3 hours in refrigerator. Fill Water
Tank. Mix all the salsa ingredients
together and chill in refrigerator. Place
salmon in a 2-quart dish and cook at
P6
for 4 minutes. Rotate halfway. Continue
cooking on
Microwave with Steam
for
12-15 minutes. Serve salmon with the
salsa.
Fillet Provencale
Serves: 4
Ingredients:

9 oz (250 g)
can stewed tomatoes,
chopped
3 oz (80 g)
can sliced
mushrooms, drained

white wine

Method:
In a shallow dish, combine onion, butter
and garlic. Cover with plastic wrap.
Cook at
P7
for 3-3

minutes. Stir in
tomatoes, mushrooms, wine and basil.
Cover, Cook at
P7
for 3 minutes, and at
P4
for 3-4 minutes, stir once.
Meanwhile, season
fi
sh with salt, skin
side only. Roll up (skin-side in) and
arrange seam-side down in sauce,
spoon sauce over
fi
sh. Cover, Cook at
P7
for 5-7 minutes, or until
fi
sh is done.
Let stand, covered, 5 minutes before
serving.
