6 cups freshly chopped romaine lettuce
• 1 c
up mandarin orange slices (if canned, NO SYRUP)
• 1/3 cup sliced black olives (optional)
• 1/2 cup chopped sweet onion

up cherry tomatoes, halved

up chilled kidney beans, drained

up hearts of palm (diced)
• ¼ c
up of olive oil

uice of 2 lemons
• 1/8 cup of balsamic vinegar
• 1
-2 cloves of garlic
• 2 s
prigs of fresh basil (optional)
Preparation:

Place the first 8 ingredients into a large salad bowl.

dd olive oil, lemon, balsamic vinegar, garlic and basil to the Short Cup and
blend until smooth.

Pour dressing over the salad.

Raw Slaw
• 1 c
up shredded and chopped carrots
• 1 c
up shredded and chopped red cabbage
• 2 c
ups shredded and chopped green cabbage
• 1 t
sp celery seed
• 1 t
sp garlic powder
• 2-3 Tbsp fresh pepper
• 2 T
bsp maple syrup
• 3 heaping Tbsp Veganaise
• 1/4 cup lemon juice to taste
Preparation:

Place first 6 ingredients in a large salad bowl.

Add maple syrup or agave, Veganaise and lemon to the Short Cup. Blend
until all of the ingredients are combined well.

Pour the mixture over the salad ingredients and toss together.

Chill.
