Bream / Snapper in a herb sauce
Preparation time: 45–55 minutes
Serves 4
Ingredients
4 prepared breams / snappers (approx.
400 g each)
40 ml olive oil
Salt
Pepper
Sauce
30 g softened butter
20 g plain flour
2 tbsp. white wine
375 ml stock
100 ml cream
1½ tbsp. chopped parsley

2 lemons

Preparation
Season the fish with salt and pepper,
brush with oil and place in the universal
tray.
Place the fish in the pre-heated oven.
Heat the butter in a pan and add the
flour. Gradually add the stock and wine
and bring to the boil. Add cream and
herbs and season with salt, pepper and
sugar.
Place the fish on a pre-heated plate and
serve with half a lemon. Serve the
sauce separately.
