1.Nach Zubereitung der Nudeln,
die Nudelmaschine mit einem
trockenem Tuch sauber machen
2.Niemals die Maschine mit
Wasser oder in der Spülmaschine
waschen.
3.Keine Messer zwischen die
Rollen einführen.

Instruction manual for
pasta machine
Prepare pasta machine for use:
1) Fasten the machine to the edge
of a table or worktop using the
enclosed mounting bracket. Fasten
the machine so that the crank is on
the right of the edge. (picture 1)
2)Before the first use, you have
to carry out the following steps to
remove excess oil:
A.Clean with a dry cloth.
B.Pass a small piece of dough
through all the rollers multiple
times. Then dispose of the dough.
Mounting the cutting roller
attachment:
To mount the cutting roller attach-
ment, it must be inserted into the
support rail in the right position
until it is firmly attached.
To remove the attachment, carry
out the process in reverse order.
Preparation of the dough:
For 4 portions:
Ingredients: 3 large eggs, 500g
wheat flour type 405, sieved and
70ml water hand-warm, 2 table
spoons of oil
Sieve the flour into a bowl, add
the eggs, oil and 2/3 of the water
(picture 1), knead everything into a
smooth dough until it is no longer
sticky. If required, add water or
flour (picture 2). Cover the dough
with a damp cloth and let rest for
approx. half an hour.
Sprinkle some flour on the worktop
and knead the dough with the balls
of the hand until it has an elastic
consistency. (picture 3)
Cut the dough into 2-3 slices and
lightly flour every slice of dough
and flatten it with the hand. (picture
4)
Cover the rest of the dough again
so that it doesn‘t dry out.
Making lasagne sheets:
Before the first piece of dough is
rolled through the machine, the
knob on the side of the machine
must be pulled out and turned
to position 1, so that the smooth
rollers on the front of the machine
are as far apart as possible (picture
5) – if this is not done, the machine
can be damaged. Guide the first
piece of dough through the two
rollers (picture 6). Fold the dough
and run it through the rollers again.
If the dough is still too damp, re
-
peat this process a few times and
sprinkle the dough with flour every
time until it is no longer sticky.
Set the knob on the side of the
machine to position 2 to reduce the
distance between rollers and run
the dough through it again. Now
gradually reduce the distance be-
tween the rollers with the adjusting
knob and roll the dough through bit
by bit until the desired thickness is
reached. (picture 7)
Making spaghetti/fettuccine:
The lasagne sheets made using
this process are the basis for
making pasta.
The cutting roller attachment
makes it possible to make 2mm
spaghetti or 6.6mm fettuccine. Now
attach the crank to the desired cut-
ting roller. Turn the crank and hold
the dough while slowly guiding it
between the cutting rollers (picture
8). Use a knife to cut the pasta to
the desired length.
