3.6.1 - Cleaning the cooking chamber
Clean at the end of the day, with chamber temperature below 50-60
°C, proceeding as follows:
• if necessary, remove the baking-pan supports without knocking the
bulbs located on the right-hand side of the cooking chamber to clean
them separately.
• Remove or open the baking-pan supports and the conveyor.
• Spray the chamber with a suitable food-grade degreasing detergent.
• Close the door and wait 15-20 min to give the detergent time to
work.
• Rinse the oven cooking chamber with clean water.
• Run a convection cooking cycle at 150 °C to dry the cooking
chamber.
3.6.2 - Cleaning the fan and heating system
• At regular intervals, the resistance and fan must be cleaned to
prevent dirt from building up - the longer dirt is left on, the harder it
is to remove.
To this end, proceed as follows:
• Remove the baking-pan and the conveyor.
• Follow the procedure indicated in the previous section: “Cleaning
the cooking chamber”.
• Refit or close the conveyor and the baking-pan supports in that
order.
The manufacturer declines any responsibility in the event of
failure to comply with the current accident-prevention and waste
disposal regulations in the country where the oven is used.
The manufacturer reserves the right to change that given above,
at any time.
3.5 - Operations after use
1) Switches off the oven.
2) Turn off the water supply taps. Disconnect the main
electrical power switch.
36 - Oven cleaning and routine maintenance
Ovens must be cleaned daily if high levels of performance, hygiene
and efficiency are to be maintained.
If you encounter a fault, do not attempt to solve the problem - contact
the technical service centre instead, which will deal with the problem.
Do not attempt to disassemble the appliance - all work must be
carried out by specialized personnel.
Perform routine cleaning as described below, complying with the
instructions given:
• Before cleaning the oven, disconnect the power supply, close the
water cock and allow the oven to cool.
• Clean stainless steel parts once a day with warm soapy water or
suitable detergents, rinsing thoroughly and drying well. Do not use
detergents containing chlorine (bleach, hydrochloric acid etc.), and
avoid cleaning steel surfaces with steel wool, brushes or scrapers,
which might result in rust.
• Do not leave food on stainless steel parts (especially acidic food
such as salt, vinegar, lemon…), as it may cause damage.
• Although the oven is accidental splashing , you should not wash
the outside of the appliance with jets of water aimed directly at it as
any water that does manage to get inside might limit the appliance’s
safety. Only use a moist cloth.
• Do not use corrosive substances (e.g. muriatic acid) to clean the
oven support top, since these could unintentionally damage the
lower parts of the appliance.
• Call in an authorized field engineer at least once a year to give the
oven a general check-up.
