sides it is gradually cooler, yet hot enough to continue cooking the stir-fried ingredients
(140°C/280°F). As a result, a non-stick coating is not required.
The range includes different wok sizes of 26 cm/10.2”, 30 cm/11.8”, 32 cm/12.6” and
36 cm/14.2”. Demeyere has woks with a small flat base, which can be used on any
type of hob/element. The round-based woks are suitable for gas or concave induction
cookers. Specifically for induction, there are the ControlInduc® and ProControl® woks,
manufactured using a special technology that limits the temperature to 250°C/485°F
on induction to avoid overheating.
Demeyere also offers a wide range of wok accessories: a ring frame which allows you to
use a round-based wok on a gas hob, a half-moon insert and circular grid for tempura and
steam cooking, and high lids for perfect sealing.
B. Teppanyaki
The multiply material (5 to 7 layers, see 5.1.2.C/D.) up to the edge offer an even heat
distribution over the entire surface. The teppanyaki is available in 2 different sizes. The
teppanyaki, made of 5-ply material up to the edge with a thickness of 5 mm/0.20”, is
39 x 27 cm/15.4 x 10.6”. The teppanyaki, made of 7-PlyMaterial® up to the edge with
a thickness of 4 mm/0.16” is 53 x 32,5 cm/20.9 x 12.8”. The large plate can be divided
into two cooking zones; place it on two hob/element rings (one large and one small)
and set the rings to different heat levels. Fry the ingredients briefly on the hot zone
and then slide the cooked food towards the cooler zone to further cook or keep warm.
C. Grill pans
Demeyere offers two stainless steel grill pans: Intense and ControlInduc®. The Intense
grill pan is made of 5-ply material up to the edge, for perfect heat conductivity and
optimum grill features (see 5.1.2.D.). The ControlInduc® grill pan has been specifically
designed for induction hobs/elements. The special ControlInduc® technology limits the
temperature to 250°C/485°F on induction hobs, thus preventing overheating (see 5.1.8).
D. Roasting pans
Demeyere roasting pans are made of 5-ply material up to the edge (see 5.1.2.D.). This
allows you to first sear the ingredients on the cooktop and then move them to cook
gently in the oven. Demeyere offers two sizes: a small roasting pan (32 x 26.5 cm/12.6
x 10.4”) which fits perfectly in all European ovens, and a large roasting pan (40 x 34
cm/15.7 x 13.4”) which was specifically created for the large American ovens (does
not fit in standard European ovens). The large roasting pan comes with a roasting rack.
E. Pancake pan
Even though the Demeyere Intense pancake pan does not have a non-stick coating, it is
still perfect for baking delicious pancakes. The 5-ply material (see 5.1.2.D.) with a thick-
ness of 4.8 mm/0.19” up to the edge, guarantees perfect heat distribution and because
it is so shallow, you can slide the pancakes out of the pan without any problem.
F. Conical sauté pans
All Demeyere conical sauté pans are made of a multi-layered material up to the edge
(5 or 7-ply, see 5.1.2.C/D.). This allows the heat to be evenly distributed from the base
to the rim, and is ideal for optimal control over the cooking process. Ideal for preparing
the finest sauces or for stewing vegetables. The special curve on the inside is perfect
for stirring and mixing.
G. Conical simmering pots and oval cooking pots
Thanks to the use of 7-PlyMaterial® up to the edge (see 5.1.2.C.), the Demeyere
simmering pots and oval pots are ideal for slowly cooking your ingredients. Heat dis-
tribution is optimal. The pans are as efficient for simmering and stewing as cast iron,
only much lighter.
