5.1.4. Ergonomic handles
The handles of Demeyere stainless steel cookware are, depending on the range, cast or
shaped. They are of high quality and carefully welded for a perfect bond and impeccable
hygiene.
The stainless steel handles of the aluminum range 'Alu Pro' aluminum series are fixed
with solid stainless steel rivets.
The soft synthetic screwed handles of the aluminum range 'Alu Comfort' are heat-resist-
ant up to 150°C/300°F.
5.1.5. Tight-fitting lids
Demeyere lids fit to perfection either in or on the cookware and as such are very tight-fit-
ting. They are interchangeable between pots and pans of the same diameter. A tightly
fitting lid prevents heat and energy loss.
5.1.6. Pouring rim
All Demeyere stainless steel straight models and the conical models from the Atlantis,
Silver, Intense, 5-Plus and Industry range have an excellent pouring rim that prevents
spills when pouring liquids.
5.1.7. Non-stick coating
For optimal preservation of the non-stick properties ensure that the pan is grease-free
after each use. You can test whether the pan is no longer greasy by wetting the pan with
pure water and holding it in a vertical position: if the water runs off the pan without
leaving any droplets, you do not need to further clean the pan. If droplets stick to the
non-stick layer, additional cleaning/degreasing is necessary.
Never use sharp objects and avoid cutting in the pan. Go for cooking utensils made of
nylon, silicone or wood. Never stack the pans or use pan protectors to store them. It is
preferable to hand wash the pans, this will considerably extend their service life.
Demeyere offers 2 types of non-stick coating for stainless steel frying pans:
A. Ceraforce Ultra: crispy fried food without sticking to the pan
This innovative ceramic coating is free of PTFE and PFOA and does not emit toxic gases
at high temperatures. Excellent non-stick properties have been combined with an extra
high degree of scratch resistance.
B. Duraslide Ultra: perfect non-stick properties and extreme ease of use
Duraslide Ultra is the latest generation of traditional non-stick coatings. The non-stick
coating contains three layers for even greater improved wear resistance. Safe to use up
to 230°C/450°F, but not under the grill.
Demeyere offers 2 types of non-stick coating for aluminum frying pans as well:
C. Duraglide Titanium: sustainable titanium particle reinforced non-stick coating
Duraglide Titanium is made up of five layers for a longer life span: a titanium plasma
base layer, an additional layer of protection for the porous plasma and 3 layers of PTFE.
D. Keravis Extreme: ceramic particle reinforced non-stick coating
Keravis non-stick coating technology composed of 3 layers with ceramic reinforcement.
5.1.8. Specially for induction: ControlInduc®
Induction cookers develop a very intense heat in a very short time. In order to maintain
the ideal frying temperature, Demeyere has developed pans with ‘ControlInduc®’, a
safety system that limits the maximum temperature of the frying pan to 250°C/485°F
on induction cookers.
Up to approx. 220°C/425°F, a product with ControlInduc® will heat up normally as any
other pan, but above this temperature the power of the inductors will gradually decrease,
only to stabilize between 245°C/475°F and 250°C/485°F. If you then put food in the pan,
such as a piece of fish or some pancake batter, the pan will cool down, automatically
raising the power of the inductors again. Even if you were to leave the pan empty on
the induction plate for hours at a time, perhaps because you have forgotten about it, it
will not overheat.
The reason for this is that ControlInduc® pans have special properties, i.e. a special
magnetic material that has been incorporated in the outer layer of the product. It is a
unique alloy that remains magnetic up to 250°C/485°F. Above this temperature it loses
its magnetic properties and sends a signal to the induction plate to reduce the heat. An
induction hob requires a magnetic material to create heat. If the magnetism disappears,
heat is no longer generated. This ensures ControlInduc® avoids time loss when heating
up, yet provides a pan that remains hot, without the risk of overheating.
