WHITe BeAN AND
ARTICHOKe DIP
30ml extra virgin olive oil
30ml unsweetened almond or soy milk
1/2 can artichoke hearts, plain, rinsed and
well drained
1/2 can cannellini beans, rinsed and drained
10ml lemon juice
3/4 tbsp diced onion
1 clove garlic, fi nely chopped
1 tsp fi nely chopped rosemary
1/2 tsp salt
1/4 tsp of paprika
Pinch of cayenne pepper
Add all ingredients, in order, to the
blender and blend until smooth. You
can add 1 tbsp of water if the mixture
gets to thick. Cover and chill in the
fridge until needed.
ADDICTIVe
eDAMAMe DIP

tbsp extra virgin olive oil
160g shelled raw edamame beans
25g baby spinach
30ml lemon juice

tbsp tahini
3/4 fi nely chopped white onion
1 clove garlic, fi nely chopped
Pinch ground cumin
Pinch red chilli fl akes
1/2 tsp salt
Add all ingredients, in order, to the
blender and blend until smooth. Taste
and adjust seasoning. If needed, you
can add more lemon juice, garlic chilli
fl akes or salt.
PeAR, APPLe AND
GINGeR SPReAD
170g chopped pitted dates
2 pears, cored and chopped
2 green apples, cored and chopped
60ml lime juice

tbsp fi nely grated fresh ginger
Soak the dates in 600ml of water
for 2 hours. Put the dates and their
liquid and all other ingredients into
the blender and blend until smooth.
Strain the mixture through a fi ne
sieve over a bowl, stirring to remove
as much liquid as possible. Scoop
the spread out of the sieve and use
immediately or store in an airtight
container in the fridge for up to 5
days. The liquid tastes great diluted
with sparkling water (1 part liquid to 1
part water) and sweetened to taste.
LeMON & HeRB
DReSSING
Olive oil
2 peeled lemon wedges
Fresh thyme
Fresh rosemary
Add all ingredients, in order, to
the blender and blend until nearly
smooth.
NO COOK
RASPBeRRY JAM
30ml coconut water
40g chopped & pitted dates
1 tbsp chia seeds
160g fresh raspberries
Liquid sweetener (optional)
Add the coconut water and dates
to the blender and blend until the
dates have broken up. Add the chia
seeds and raspberries and blend until
you get a thick, preferably chunky,
consistency. If the jam is to tart,
add liquid sweetener to taste – don’t
overdo it or the jam will get too thin.
Chill in the fridge for 30 minutes
before use, it will thicken and the
fl avours will develop. Keep in the
fridge for up to 4 days.
