Waxy potatoes
(2 lbs Yukon Gold potatoes)
1 tbsp Chives
1 tbsp Flat-leaf parsley (Italian)
150 g Diced ham (approx. 5 oz)
½ tsp Salt
Pepper, to taste
2 tbsp Clarified butter/Ghee,
for frying
1. Peel potatoes and grate using the
Potato Grater. Place grated pota-
toes and diced ham into a bowl.
Finely chop the parsley and chives,
add to bowl and season.
2. Heat up the clarified butter or
Ghee in a large non-stick frying
pan. Add the potato mix and
fry for around 5 min., stirring
occasionally. Shape the potato mix
in the frying pan into a flat cake,
the same size as the frying pan.
Cover and fry on medium heat
for around 15 min. until golden
brown. To flip the Rösti, place a
flat plate, about the same size as
the pan, on top of the potatoes.
Press the plate firmly onto the
frying pan, and then carefully flip
the pan. Set the Rösti on the plate
aside, ensure that the brown side
is facing upwards. Add a little
bit of Ghee or butter to the pan,
then slide the Rösti back into the
frying pan, to brown the other
side of the Rösti. Fry uncovered for
around 15 min. until cooked and
slightly browned.
Goes well with: green salad.
