3/4 cup unbleached, pre-sifted flour
1/2 cup sugar
1 (1 oz.) package Jello
®
Instant Sugar Free Fat Free
Vanilla Pudding Mix
1 teaspoon baking powder
2 tablespoons Maraschino cherry juice
5 tablespoons jarred Maraschino cherries,
1 tablespoon honey
1 tablespoon vegetable oil

Place Maraschino cherries and juice into a medium bowl.
Use a fork to mash into small pieces.
Add the remaining ingredients to the bowl. Mix well.
Fill each of the cupcake molds on the lower cooking plate
with 1 scant tablespoon batter.
Cook 10-15 minutes or until done.
Makes 16-18 mini cupcakes
