Apple Mini cupcAkes
To create a browned, crunchy outside,
spray cooking plates liberally
and prepare without cupcake liners.

3/4 cup unbleached, pre-sifted flour
1/2 cup sugar
1 (1 oz.) package Jello
®
Instant Sugar Free Fat Free
Cheesecake Pudding Mix
1 teaspoon baking powder
5 tablespoons apple pie filling, mashed with a fork
1 tablespoon vegetable oil

Place apple pie filling into a medium bowl.
Use a potato masher to mash.
Add the remaining ingredients to the bowl. Mix well.
Fill each of the cupcake molds on the lower cooking plate
with 1 scant tablespoon batter.
Cook 10-15 minutes or until done.
Makes 16-18 mini cupcakes
