BROwnie Mini cupcAkes
These rich, chewy bites are best prepared with mini cupcake liners.

3/4 cup unbleached, pre-sifted flour
1/2 cup sugar
1 (1 oz.) package Jello
®
Instant Sugar Free Fat Free
Chocolate Fudge Pudding Mix
1 teaspoon baking powder
3 tablespoons dark Karo
®
syrup
1 tablespoon espresso powder
1 teaspoon cinnamon
3 tablespoons boiling water
3 tablespoons vegetable oil

Add boiling water to a medium bowl. Dissolve espresso powder and
cinnamon.
Add the remaining ingredients to the bowl. Mix well.
Batter will be thick. Roll into 1-1/4 to 1-1/2-inch balls.
Add balls to muffin liners sprayed with cooking oil.
Cook 10-15 minutes or until done.
Makes 16 to 18 mini brownie cupcakes.
