Mini cupcAkes
To create a crunchy outside, spray cooking plates liberally
and prepare without cupcake liners.

3/4 cup unbleached, pre-sifted flour
1/2 cup sugar
1 (1 oz.) package Jello
®
Instant Sugar Free Fat Free
Butterscotch Pudding Mix
1 teaspoon baking powder
3 tablespoons maple syrup
3 tablespoons water
3 tablespoons vegetable oil

Combine and mix all ingredients in a medium bowl.
Batter will be thick.
Fill each of the cupcake molds on the lower cooking plate
with 1 heaping teaspoon of batter.
Cook 10-15 minutes or until done.
Makes 14 to 18 mini cupcakes.
