Cleaning of the outer parts (Daily / Weekly)
Clean all external parts of the counter every week. See “General instructions” 24.2.

Clean the internal parts (Monthly)
Refer to chapters 22.1 and.2 proceed as follows:

remove all foodstuff from the counter
2
remove all the removable parts, such as display dishes, grid trays, etc.
3
wash with lukewarm water (max 30°C)
4
disinfect using an antibacterial detergent
5
carefully clean the bottom basin, the drip tray and the water discharge protection grid
eliminating all foreign bodies that have fallen through the suction grill, lifting the fan plate
where necessary
6
carefully dry using a soft cloth
To clean the bain-marie model (TCBM), completely drain the water, see chap. 16.4.
After cleaning, refit the overflow pipe Fig. 16 -A-

move the lids upwards to make them come out from the lower rail guides

rotate the lower part towards the operator

remove the lids

gently place them on a flat surface protected by a soft cloth, DO NOT break or
damage them

clean as indicated in the glass parts cleaning section (chap. 23.5)
7
Reinstall the closing devices
