Directions
Brush the sweet potato slices with 1 tbsp of olive
oil until they are all coated and season with salt.
Place the sweet potato slices in the Personal
Griddle and cook until crisp. Using a heat-resistant
nylon or silicone utensil, transfer the slices from the
Griddle to a large platter.
In a small bowl, mix together the remaining olive
oil, garlic, chopped mint, chili, and sherry vinegar
until completely combined, option to add more
salt. Pour the dressing over the griddled potato
slices and serve warm.

washed and sliced into
¼” thick slices
dash of salt
3 tbsp extra
virgin olive oil
2 garlic cloves, very
finely chopped
1 handful of fresh mint
leaves, chopped
1 large red seeded
chili, seeded and
finely chopped
1 tbsp sherry vinegar
